Charbroiled Oysters

The Sauce:

1 Stick Unsalted Butter, very soft
1 Pinch Kosher Salt
1 tsp Freshly Ground Black Pepper
1 Tbsp Minced Garlic
4 Tbsp Pecorino Romano
1 pinch Cayenne
1 pinch White Pepper
1 Spritz Lemon Juice
1 tsp Minced Italian Parsley

Whisk together all ingredients.

For the Oysters:

1 Dozen Large freshly shucked oysters
1 Recipe of the Sauce, above
Pecorino Romano to finish
Minced Italian Parsley for garnish
Fresh Bread
Lemon wedges

Mix together all of the ingredients.

Heat a charcoal or gas grill until very, very hot. Place the oysters on the hottest spot on the grill and let them cook in their own juices for a few minutes, just until they start to bubble and the edges curl.

Oven Option – Preheat the oven to 500 degrees.  Place the oysters on a bed of salt on a cookie sheet.  Heat the oysters for 4 minutes in the oven, remove, top with butter and cheese and heat for another 6-7 minutes.  Rolled the butter into a log and cut into individual pieces and worked really well.

Smoked Nuts

Spicy Smoked Nuts

1/2 cup butter
2 tsp salt
2 tsp paprika
2 tsp cayenne
2 tsp garlic powder
2 tsp black pepper
2 tsp onion powder
2 tsp white pepper

20 oz mixed nuts

Melt butter and mix together all dry ingredients. Mix in nuts. Smoke 15 – 20 minutes until golden brown.

Sweet Smoked Nuts

3 egg whites
2 tblsp water
2 tblsp vanilla extract
1 tblsp cinnamon
1 tsp ginger
1 tsp all spice
1 1/4 cup brown sugar
1 1/4 cup white sugar
4 tblsp melted butter
40-48 oz mixed nuts

Add water, vanilla, egg whites, and beat until stiff.
Stir in all additionall ingredients but the nuts and beat until stiff again.
Add nuts and coat them.

Smoke on low heat for 2 hours. Smoke on high heat for 40 minutes.

Trinrud’s Artichoke Dip

Fantastic artichoke recipe that my wife got from a co-worker a number of years back.

1 can artichoke hearts (packed in water) drain and roughly chop
1 cup fresh grated parmesan cheese
1 cup mayo
1 cup cream cheese (room temp)
1 cup sour cream (can use light but why bother)
dash garlic powder

Blend together the mayo, cream cheese, and sour cream. Stir in rest of ingredients.
Bake in low oven (325) for 1/2 hour until bubbly. Transfer to crockpot and cover with colby jack cheese.

Serve with wheat thins and celery.
